Scoring brownie points with dad on his day

Father’s Day is here, and whether you’re celebrating at some time this week, or in just a couple of hours, then here’s an idea for you.

Many people say that the way to a man’s heart is through his stomach, and while I can’t speak for every man on this planet, I can say that every dad that I know likes brownies.

If you have a dad to celebrate who doesn’t need any more knick knacks, make him brownies.

Even if you already have a gift in mind, there’s no reason that brownies can’t accompany it.

Everyone has a favorite type of brownie. There’s cakey brownies, chewy brownies, brownies with frosting, corner brownies, or the center cut from the pan.

Then there are the brownies with additional ingredients — chocolate chips, peanut butter, mint chocolate pieces, the list goes on and on.

These particular brownies are fudgy, the kind that make you feel as though you might actually be eating brownie batter.

The kind that have been cooked just long enough to be safer than eating batter, but taste pretty much the same.

This recipe is super sweet, so if you like a dark chocolate brownie, these are probably not the brownie for you.

INGREDIENTS

¢ C butter, melted

1 Tbsp. cooking oil, (olive oil or coconut oil are fine)

1 1/8 C. superfine sugar, caster sugar or white granulated sugar

2 large eggs

2 tsp. pure vanilla extract

¢ C. all-purpose flour

¢ C. unsweetened cocoa powder

™ tsp. salt

INSTRUCTIONS

1. Preheat oven to 350∂F.

2. Lightly grease an 8-inch square baking pan with cooking oil spray. Line with parchment paper (or baking paper); set aside.

3. Combine melted butter, oil and sugar together in a medium-sized bowl. Whisk well for about a minute. Add the eggs and vanilla; beat until lighter in colour (another minute).

4. Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).

5. Pour batter into prepared pan, smoothing the top out evenly. (OPTIONAL: Top with chocolate chunks or chocolate chips.)

6. Bake for 20-25 minutes, or until the centre of the brownies in the pan no longer jiggles and is just set to the touch (the brownies will keep baking in the hot pan out of the oven). If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies.

7. Remove and allow to cool to room temperature before slicing into 16 brownies.
