North Collins’ Speedy’s to reopen

NORTH COLLINS — A North Collins hub is returning to the village soon as construction has begun. Speedy’s, a bar and restaurant that is well known in the village, has work trucks on site.

“Work started on Speedy’s,” North Collins Village Mayor Vincent George said. “Joe from Three Star (Restaurant) is the owner (of Speedy’s). We’ve been waiting for that place to open up.”

Yes, Speedy’s is only one restaurant, however, the heritage that goes with the old-fashioned diner building runs much deeper.

“It was there forever,” Mayor George said. “I mean it was a local establishment, where guys went up there in the morning to have their coffee and it was a bar. It was just very, very popular. It has been closed for a long, long time. I can’t wait to see that place open.”

Many local residents question why a restaurant owner would buy another restaurant. George projects this as diversifying an audience that a traditional breakfast-to-dinner eatery would attract.

“Joe is going to still have the Three Star, which is kind of a basic restaurant. This is going to be more upscale, where you can take your family, or wife there to have a drink and a steak dinner and that type of thing,” George said.

There is no timeline for the opening of the business. George added that the building was gutted last summer.

The village laundromat on Route 62, attached to the post office, has closed. Mayor George stated that a local bottle and can return business is looking into taking over the facility and will seek the “yes” from the village’s zoning board for approval.
